Description

Dry cornbread mix
Makes 12 corn muffins or fills an 8″ skillet
Just add your choice of :
1 stick of butter
1 cup of milk
1 optional egg

Preheat oven to 400 degrees (or 375 convection)
Add dry mix to a bowl
Add melted butter, milk, and an (optional) egg
Mix thoroughly, then immediately transfer to pan as batter thickens as it sits
Bake until golden
Muffins bake for about 15-20 minutes
8″ skillet bakes for about 30

Optional tips and tricks:
Melt your butter in an 8″ cast iron pan, pour the butter into bowl with other wet ingredients, then add mixed batter back to the buttered cast iron
Use a large cookie/cupcake scoop to make corn muffins even
