Hi! I’m Ashley! I graduated from St. Joseph’s Academy in 2015 and LSU in 2019. I currently live and bake in Springfield, Louisiana. In the spring of 2021, I was diagnosed with Celiac Disease. I’ve always enjoyed baking, so when I was diagnosed, I was determined to find good recipes for the foods I missed. I tried a bunch of different recipes and flour blends until I found things that worked, because I want to be able to offer gluten free, dairy free, egg free, and vegan treats that actually taste good. I understand the importance of catering to special dietary restrictions, and I take pride in my work. It’s difficult to find food products in southeast Louisiana that meet those dietary needs, and if you have luck in finding something in a place like a supermarket, those items are often not very good. My baked goods are ones that everyone can enjoy, even those who can still eat gluten. 

I grew up watching Bizarre Foods with Andrew Zimmern. It was a show where the host traveled to a bunch of different countries and experienced so many different cultures through their food. That show, along with our annual crawfish boils, really instilled in me that food is one of the best, most amazing ways to bring people together. But, when you have dietary restrictions, you can really feel left out. I wanted to use my talents to help those of us that need to eat gluten free (or dairy free) feel included again, even if it’s just dessert (for now). In January of 2023, I started selling gluten free (and dairy free) king cakes and I didn’t realize how popular they would be! Lots of people asked if I made other desserts, so I started Gator Bites Bakery to sell gluten free and dairy free cakes, cupcakes, cheesecakes, and other goodies year-round.

Everything I offer is gluten free. Most of my offerings can be made dairy free, egg free or vegan as well. If there’s something you miss from before you went gluten free, dairy free, egg free, or totally vegan, please let me know and I’ll try to make it happen! I love a challenge!
